Are there any clear instruction on how to set up a windows 11 pro music server and how to connect it to Volumio?

No there aren’t.
Please go to the websites that deliver the Music server software and look there.
Volumio works via uPnP/DNLA, to either browse the Media server or acts as endpoint for the Media Server.
