I have the following generic DAC:

As you can see the guide on the link and various web searches has some connecting via the P5 headeronly. Whereas others are using P5 for 5V and various GPIO pins:

I have the yellow V.2.0 board. Cany anyone please advise the proper way to connect it to the Pi 1 B.

You only need the P5 connector on a PI1B.
Connect it as follows:
DAC ---- P5
MLCK — not connected (the PI doesn’t have a master clock, it’s generated on the DAC)
GND ----- PIN 7
DATA ---- PIN 6
LRCK ---- PIN 4
BCK ------ PIN 3
For supplying power i recommend to use a good quality extra linear power supply with 5V / 200mA but you can also connect it to P5
DAC ---- P5
5V ------- PIN 1
GND ---- PIN 8

I selected the “Generic I2S” in settings as I could not see the Audiophonis or ES9023 listed. Is this fine?
Also, I am no longer able to control the volume via Volumio; it is stuck at 100%. Why is this?

Hi,
This DAC does not support hardware volume mixer. You have to use software mixer if you want to be able to set the volume.
