I’m relatively new to Volumio and even newer to the wonderful world of Raspberry Pi. How do I determine the RAM amount? It was preinstalled in an Okto Research dac8 Stereo. Can I still access and use the rPi for other things in addition to Volumio? For instance, I’d like to use a second one as a security camera, and connect it with a PoE hat. Can I use it at the same time for Volumio simultaneous playback?

Sorry, no. Volumio is an operating system not a program/app.
Simplest solution is to open a SSH session and type:
free
I would advise against it to add camera’s to your player
